Fit Feb
I have been back at work for almost a month now and starting to get into a routine. Managed to find my groove and started doing back yard work outs in the evening until my daughter got gastro and then it hit me!!! Now all the illness are out of the way I am on a personal challenge called Fit Feb.
My aim is to do the following:

Stairs are my friend
I survived my first week back at work after returning from maternity leave and all I can say is 1 week down and 20 weeks to go until I reach my long service leave!
Having a baby and working full time I am finding it difficult to fit in a solid work out so I am making the most of the stairs and let me tell you there are stairs everywhere. When I catch the train I don't take the escalator I climb the stairs and at work I take the stairs instead of the lift.
The amount of exercise appears small but every bit helps in fitness and reducing body fat.
Do you take the stairs where possible?

Zucchini and Corn Pie
Tomorrow my maternity leave is over and I head back to full time work writing travel brochures. I am trying to get organised and have made some dinners for JJ so that her dad can feed her before I get home.
On the menu is Zucchini and Corn Pie. Since JJ likes my Zucchini Slice so much I thought I would try something a little bit different.
Zucchini and Corn Pie
Ingredients
2 eggs (beaten)
1/2 cup of self raising flour
250g grated zucchini
1 small onion finely chopped
1 small red capsicum chopped
1/2 cup of grated reduced fat cheese
2 table spoons of oil
130g creamed corn
Method
Preheat oven to 180C and grease a 20cm pie dish
Beat eggs in a large bowl until combined
Stir in remaining ingredients
Pour into the greased tray
Bake in the oven for 45 minutes
Must have tasted good as I tried to get a photo of JJ and the pie but every time I put down a piece it was devoured.

So organised!!
It is my birthday today and my sister gave me an OTI Organiser so I am going to be super organised in 2013! The dairy has so many features to get your life in order.
There is a section for your goals, work outs and meal planning. It so happens that one of my goals for next year is to meal plan so now I have no excuse! We waste so much food by not being organised when I do the shopping.
I love the fact there is a section for holidays including things to pack and also a section for entertaining. Mind you after JJ's HUGE first birthday party on the weekend I don't think I will be entertaining again any time soon!!!
The only down side to the diary is there is not much space under each day to write down all your appointments and events.
Here is to me being organised next year, eating healthy and exercising regularly and with my new diary I have no excuse!
